6 dashes Angostura bitters
3 dashes orange flower water
300g sugar
Separate eggs and whisk whites into stiff peaks. Add sugar to yolks and whisk until pale and smooth then add cream and milk and whisk mixture until smooth. Slowly add alcohol, whisking hard constantly. Add bitters and orange flower water then fold in egg whites. Chill in fridge for an hour then serve with grated nutmeg.

Fill rocks glass with hot water and rest brandy balloon over it. Add triple sec, coffee beans and bitters Rotate balloon and when warmed ignite. Continue rotating until coffee beans are giving off their aroma. Add orange zest and cognac. Continue rotating until brandy is warmed. Extinguish flame with a napkin and decant into another brandy balloon.

5 slices satsuma, 1 cinnamon stick, 90g sugar, 5g hops, 2 cloves
1 dsp spoon honey, 2 splashes Angostura bitters, 1 star anise
Simmer all ingredients for 20 mins then strain and serve with satsuma slices and a cinnamon stick. Serves 6

1 disc of line cut from the side of the fruit
Add rhum and sugar to glass and squeeze lime over then drop into glass. Stir and add a single cube of ice.
